Ingredients
for Chicken Marinade

300g chicken

1 tbsp water

1 tsp cornstarch

1 tsp oil

1 tsp oyster sauce
For Stir Fry

600g zucchini
-
1/2 cup water
-
1 tbsp oyster sauce
-
2 tsp cornstarch
-
1 tsp soy sauce
-
1/4 tsp sugar
-
1/4 tsp white pepper
-
1/4 tsp sesame oil
-
2 garlic cloves
-
1 tbsp Shaoxing wine
Instructions

Mix water, cornstarch, oil and oyster sauce to form a marinade.

Marinade chicken slices at room temperature for about 20-30 min.

Toss zucchini slices with salt in a large bowl. Let stand for 20-30 min.

Make the stir fry sauce: combine water, oyster sauce, cornstarch, soy sauce, sugar, pepper and sesame oil.

Rinse zucchini to remove excess salt. Then gently squeeze out excess water.

Brown chicken in wok and set aside.

Cook garlic with oil until aromatic, about 15 seconds. Then add Shaoxing wine to deglaze wok.

Add zucchini.

Add stiry fry sauce
-
Finally add chicken back in.
