Yellow Cake

Ingredients

  • 150g Rice Flour
  • 75g Glutinous Rice Flour
  • 75g Tapioca Flour
  • 1 tsp Xanthan gum
  • 150g sugar
  • 2.25 tsp baking powder
  • 3/4 tsp salt
  • 200ml cup oil
  • 150ml milk
  • 4 large eggs
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 180C. Grease two 8-inch round cake pans.
  2. Whisk together dry ingredients.
  3. Add in wet ingredients.
  4. Divide batter into cake pans, and bake for 30 minutes.

Sheet pan variant

If using a 9 x 13-inch sheet pan, bake for 40 minutes until golden brown.
