1 zucchini

1 can corn

1 large onion

3 garlic cloves

1 tbsp chili powder

1.75 tsp ground cumin

1 tsp dried oregano

1/2 tsp ground pepper

1/2 tsp salt

400g chicken breast

1 can white beans, e.g. cannellini / pinto

4 cups chicken broth

1.5 cups water
Instructions

Frozen Prep: Combine zucchini, corn, onion, garlic, chili powder, cumin, oregano, pepper and salt. Layer chicken on top, then beans.

Cook: invert frozen prep into instant pot (so beans are at bottom). Add broth and water. Cook on soup setting.
Optional garnishes: cilantro, lime wedges, sour cream and avocado.
