Tiramisu

Ingredients

  • 3 eggs
  • 1/2 cup caster sugar
  • 1/2 tsp vanilla extract
  • 250g mascarpone
  • 1.25 cups black coffee
  • 2 tbsp liquor, optional
  • 24-30 lady fingers
  • Cocoa powder

Instructions

  1. Separate egg yolks and whites.
  2. Beat yolks and sugar until they turn pale yellow and thick, about 10 minutes
  3. Add vanilla and mascarpone, beat until just combined and smooth. Set aside.
  4. Beat egg whites until stiff.
  5. Add 1/2 cream mixture into egg whites. Gently fold through. Then add remaining cream mixture and fold through until just combined. Set aside.
  6. Mix coffee and liquor together.
  7. Quickly dip lady fingers into coffee, then line the bottom of a 8” square dish.
  8. Spread over half the cream, then top with another layer of biscuits. Spread with remaining cream.
  9. Cover, refrigerate for at least 4-5 hours, preferably overnight.
  10. Dust with cocoa powder just before serving.
