Ingredients
- 3 eggs
- 1/2 cup caster sugar
- 1/2 tsp vanilla extract
- 250g mascarpone
- 1.25 cups black coffee
- 2 tbsp liquor, optional
- 24-30 lady fingers
- Cocoa powder
Instructions
- Separate egg yolks and whites.
- Beat yolks and sugar until they turn pale yellow and thick, about 10 minutes
- Add vanilla and mascarpone, beat until just combined and smooth. Set aside.
- Beat egg whites until stiff.
- Add 1/2 cream mixture into egg whites. Gently fold through. Then add remaining cream mixture and fold through until just combined. Set aside.
- Mix coffee and liquor together.
- Quickly dip lady fingers into coffee, then line the bottom of a 8” square dish.
- Spread over half the cream, then top with another layer of biscuits. Spread with remaining cream.
- Cover, refrigerate for at least 4-5 hours, preferably overnight.
- Dust with cocoa powder just before serving.
