Roasted Root Vegetables

Ingredients

  • 4 carrots

  • 1 red onion

  • 2 sweet potato

  • 3 tbsp olive oil

  • 1.5 tbsp apple cider or balsamic vinegar

  • 1 tsp dried herbs. e.g. thyme, rosemary or sage

  • 1/2 tsp salt

  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 220C

  2. Toss vegetables with oil,vinegar, herbs, salt and pepper.

  3. Roast vegetables for 30-40 min.
