4 carrots

1 red onion

2 sweet potato

3 tbsp olive oil

1.5 tbsp apple cider or balsamic vinegar

1 tsp dried herbs. e.g. thyme, rosemary or sage

1/2 tsp salt

1/2 tsp pepper
Instructions

Preheat oven to 220C

Toss vegetables with oil,vinegar, herbs, salt and pepper.

Roast vegetables for 30-40 min.
