Ingredients

1 head broccoli

2 carrots

2 cups red cabbage

2 tsp soy sauce

1/2 tsp chicken bouillon

1-2 tbsp grated ginger

2 tsp miso paste

2 tsp olive oil

600g white fish fillet
Instructions

Preheat oven to 200 C.

Combine soy sauce, stock powder dissolved in 1/4 cup of hot water and ginger.

Toss vegetables in sauce.

Bake vegetables for 10 min.

While vegetables bake, mix miso paste with olive oil, then rub over fish fillets.

Take vegetables out of oven, then place fish on top and return to oven for a further 10-15 min.
