Jambalaya

Ingredients

  • 500g chicken thighs

  • 2 cups rice

  • 200g shrimps

  • 400g minced pork

  • 2 ribs celery

  • 1 green bell pepper

  • 1 can crushed tomatoes

  • 1 onion

  • 8 garlic cloves

  • 1 tsp tomato paste

  • 1.5 tbsp soy sauce

  • 2 cups unsalted chicken stock

  • 1/4 tsp dried thyme

  • 1/4 tsp dried oregano

  • 1 tsp smoked paprika

  • 1/2 tsp cayenne pepper

Instructions

  1. Season and brown chicken and shrimp in a large pot. Then set aside.

  2. Dice vegetables: onions, bell peppers, celery. Mince garlic.

  3. Saute sausage / minced pork in the same pot.

  4. Add in onions, bell peppers and celery.

  5. Add in garlic, tomato paste and spices (thyme, oregano, paprika, cayenne pepper).

  6. Deglaze pot with 1/2 cup chicken stock, and add soy sauce.

  7. Push ingredients to the side and return chicken to pot. Add rice on top and the rest of the chicken stock. Ensure rice is fully submerged! Then layer tomatoes on top.

  8. Bring to boil, then reduce heat to low-medium. Cover and simmer for 20-25 min, stirring occasionally, until the liquid is absorbed and rice cooked.

  9. Mix in shrimp. Season to taste.
