Ingredients

1/2 large onion

3 cups cremini mushrooms

2 garlic cloves

4 cups spinach

1 tomato

2 tsp Italian herb mix

1 tbsp lemon juice

400g tilapia fillets
Instructions

Saute onions.

Add mushrooms and garlic.

Add spinach, tomato and 1 tsp herb mix.

Stir in lemon juice and season with salt and pepper. Set aside.

Sprinkle fish with 1 tsp herb mix, salt and pepper.

Cook fish in skillet.
