Frittata

Ingredients

  • 8 slices bacon
  • 1/2 onion
  • 1/2 lb spinach
  • 8 large eggs
  • 1/2 cup milk
  • 1 cup grated cheddar cheese

Instructions

  1. Preheat oven to 180C.
  2. Cook bacon and set aside
  3. Saute onions in bacon fat, then wilt spinach. Set aside.
  4. Beat eggs and milk. Season with salt.
  5. In a baking dish, place filling and pour over egg mixture.
  6. Bake for 20-30 minutes.
