Egg Muffins

Ingredients

  • 3 slices bacon

  • 1 head broccoli

  • 1/2 onion

  • 8 large eggs

  • 1 cup cheddar cheese

  • 1/2 cup milk

  • 1/2 tsp salt

  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 160 C.

  2. Cook bacon until crisp. Set aside

  3. Cook broccoli and onions until soft. Set aside to cool.

  4. In a large bowl, whisk eggs, cheese, milk, salt and pepper.

  5. Stir in bacon and broccoli into egg mixture.

  6. Pour mixture into prepared muffin cups.

  7. Bake until firm to touch, about 25-30 min. Let stand for 5 min before removing from muffin tin.
