Dijon Salmon with Green Bean Pilaf

Ingredients

For Salmon

  • 400g salmon

  • 3/4 tbsp minced garlic

  • 1/2 tsp salt

  • 1.5 tbsp mayonnaise

  • 1.5 tbsp whole-grain mustard

  • 1/4 tsp pepper, divided

For Green Gean Pilaf

  • 250g green beans

  • 1/2 lemon

  • 1.5 tbsp pine nuts

  • 1/2 cup cooked rice

  • 1 tbsp water

Instructions

  1. Preheat oven to 220 C

  2. Brush salmon with oil

  3. Mash garlic and salt into paste. Combine garlic paste with mayo, mustard and 1/8 tsp pepper.

  4. Spread part of the mixture on top of fish, and bake (6-8 min per inch of thickness).

  5. Meanwhile, saute green beans, lemon zest, pine nuts, the remaining garlic paste and 1/8 tsp pepper over medium-high heat.

  6. Reduce heat to medium and add cooked rice.
