Gluten-Free Chocolate Chip Cookies

Ingredients

  • 135g gluten free flour

  • 1/2 tsp xanthan gum

  • 1/4 tsp salt

  • 1/2 tsp baking soda

  • 50g granulated sugar

  • 50g brown sugar

  • 60g unsalted butter

  • 1 egg

  • 1/2 tbsp vanilla extract

  • 6-8 oz chocolate chips

Instructions

  1. In a large bowl, whisk together flour, xanthan gum, salt, baking soda, granulated sugar and brown sugar.

  2. Create a well and add in butter, eggs and vanilla. Mix until well combined.

  3. Add chocolate chips.

  4. Chill dough for at least half an hour. Two hours would be best.

  5. Preheat oven to 175 C, and form cookies.

  6. Bake until cookies are golden brown around the edges, about 12 min. Remove from oven, and allow cookies to cool for 5 min or until firm before transferring to a wire rack to cool completely.
